DEAN LORRAINE VILLANUEVA PhD
Ms Lorraine Villanueva is the College’s Dean. Prior to this, she was a faculty member of the Department of Hotel, Restaurant, and Institution Management (HRIM) of the College of Home Economics (CHE) at the University of the Philippines in Diliman (UPD), where she taught in both the graduate and undergraduate programs, as well as handled curriculum development and review. In June 2006, she received the Professional Achievement Award in HRIM from the CHE Alumni Association for her ‘valuable contribution to the development of the business and management components of the HRIM program of the College, thus enhancing the competitiveness of graduates.
She has done research and conducted training programs on productivity, quality enhancement, systems analysis, cost control, and teambuilding. She has also done consulting work on total quality management; she has had formal training in ISO 9000 from SGS-Yarsley.
She recently completed her doctoral dissertation entitled “Communicating Food Safety in the Formal Foodservice Sector: Approaches and Action Plan,” for the graduate program in Mass Communication at UPD. Her study was selected for presentation at the 6th Asia Pacific Rim Universities Conference at the University of Oregon-Eugene.
She is President of the Council of Hotel and Restaurant Educators of the Philippines (COHREP), an association of over 200 educators from schools nationwide offering Hotel and Restaurant Management and similar programs. She serves as member of the Commission on Higher Education’s Interagency Committee on Student Internship Abroad Programs (SIAP). She is also affiliate director of the Hotel and Restaurant Management Association of the Philippines.
In May 2000, Lorraine was awarded the title ‘Certified Hospitality Educator’ by the Educational Institute of the American Hotel and Motel Association ‘in recognition of successfully demonstrating the knowledge and skills required for supporting and delivering the highest quality of hospitality education worldwide.’
The Nutritionist-Dietitians’ Association of the Philippines Foundation, Inc. conferred the Clara Ruth Darby Memorial Lectureship Award on Lorraine F. Villanueva for her distinguished career in Hotel, Restaurant and Institution Management and her outstanding leadership in hospitality education, which earned for her numerous awards and citations, and for her demonstrated professional competence of the highest degree in the practice of her profession as President of COHREP” given Feb. 20, 2007 during the 52nd Annual Convention of NDAP at the Manila Pavilion Hotel. This was the first time such an award was given to an individual outside of the Nutrition and Dietitian profession.
CHEF SEE CHEONG YAN
Chef See is the the Corporate Culinary Head at Enderun Colleges. He graduated from Les Roches in Switzerland with a Diploma in Hotel and Restaurant Management. Chef See earned his Certificate in Business Administration, with honors, from Washington State University.
In addition to his education credentials, Chef See has over 20 years worth of experience in the field of culinary arts worldwide having worked at the Kempinski Hotel & Traders Hotel in China and at Bahnhofbuffet SBB Basel in Switzerland among others. In the Philippines, Chef See has led the kitchen operations of Edsa Shangri-la, Hyatt Regency Manila and Tagaytay Highlands. Truly an international citizen, Chef See speaks English, Bahasa Malaysia, Cantonese, Mandarin, French and Filipino fluently.
Chef See, a Malaysian, is married to a Filipina and has two teen-aged sons. To keep fit and trim, he plays soccer and “futsal” on weekends.
CHEF THOMAS WENGER
Chef Thomas Wenger is the Senior Instructor for Culinary Arts at Enderun. His industry experience spans over 25 years which includes executive chef posts at the Mandarin Oriental, Manila, the Oriental Singapore and the Le Royal Meridien and Le Meridien President, Bangkok. This Swiss chef also trained at Ecole Hoteliere de Lausanne in Switzerland and The Royal Institute of Public Health in London.
MARIA RITA ISABEL CASTRO
Ms. Bel S. Castro lectures on Food & Beverage Service Procedures and Banquet, Functions and Catering Services Procedures.
She earned her Psychology degree from the Ateneo de Manila University in
1985 which led her to the fields of advertising, public relations, events management, and line production. After nearly 15 years in the business, her interests took a pleasant turn when she chose to enroll in a one-year Certificate IV Program in Restaurant Operations at Le Cordon Bleu in Australia, finished with the marks of "High Distinction". She then went on to pursue her Master's degree with the University of Adelaide in South Australia. In 2003, Ms. Castro graduated at the top of her class with marks of "High Distinction" and became the first Filipino and the first Asian to be awarded the degree of MA in Gastronomy.
Ms. Castro currently serves as the Marketing Communications Consultant and Event Coordinator for several key clients. She also contributes regularly to the Lifestyle Section of the Manila Bulletin and Appetite magazine.
Bel is also a seasoned theatre professional, having been involved in over fifty productions in various capacities with the Philippines' leading theatre companies.
INES CABARRUS
Ms Ines Cabarrus is a member of the Enderun faculty whose expertise is on Beverage Management and Wine Appreciation. She has a degree in Theatre and English from the College of the Holy Cross in Worcester, Massachusetts. In addition to this, Ines earned an International Diploma in Hospitality Management from the William Blue International Hotel Management School in Sydney, Australia. She previously worked as a Trainee Sommelier at the Wildfire Restaurant in Sydney and as an Assistant Manager for Operations at the Sugi Japanese Restaurant in Manila. Among Ines’ other interests are writing, literature, philosophy, music, theatre and physical fitness.
CHEF MARKUS GFELLER
Swiss national Chef Markus Gfeller handles the Culinary Arts subject for Enderun. He has extensive experience working the menus of hotels and restaurants in Switzerland, Hawaii, and Manila, in various posts such as Commis Tournant, Chef Tournant, Chef de Cuisine, and Sous Chef. After going through the three-year (1984-1987) apprentice program at the Culinary School in Burgdorf, Switzerland, he further enhanced his skills by taking courses in Basic Fine Dining Service and Oenology in Zurich, and obtaining a management diploma at the National Hotel and Restaurant Management School in Bern. At present, he is Chair and Chief Operating Officer of Caspian Concepts, Inc., a hotel and restaurant concept development firm, and Beluga Meal Solutions, Inc., a passenger service concessionaire for WG&A SuperFerry. He also co-owns CAV, an innovative wine bar located at the Fort Bonifacio High Street
CHEF CYRIL ERMITA
Chef Cyril is one of Enderun’s Culinary Arts faculty with expertise in Bakery and Pastry. He graduated from the University of Santo Tomas with a Bachelor of Science in Hotel and Restaurant Management. Prior to joining Enderun, Chef Cyril has been working at the pastry kitchen of Edsa Shangri-la Hotel since 1995.
Aside from concocting pastry and bakery recipes, among Chef Cyril’s other interests are reading and critiquing films.
CHEF VANESSA CONANAN
Chef Vanessa Conanan is the Assistant Instructor for Culinary Arts. She has a degree in International Studies from De La Salle University and earned an Associate of Applied Sciences degree from Le Cordon Bleu Culinary Arts of the Cooking and Hospitality Institute of Chicago, USA. Before joining Enderun, she worked at a Cafe Le Coq, French Bistro, in Chicago. She is a certified Servsafe Food Safety instructor/proctor.
Chef Vanessa is also a part time coach for Futbol Fanatics, a soccer camp for kids.
CHEF SUSANA CECILIA LEGARDA MONTINOLA
Chef Suzette co-teaches the School’s core courses in Culinary Arts. A Communication Arts major from the Ateneo de Manila University, Chef Suzette then earned her Diploma in Hotel and Restaurant Management from Switzerland’s Ecole Les Roches in 1993. She channeled her energies into the hospitality industry, handling food and beverage outlets for prominent Manila hotels such as the Mandarin Oriental and the Hotel Intercontinental. Since 1999, she has set up and managed her own restaurant in Old Manila, La Cocina de Tita Moning. From 2004 to 2005, she earned her culinary credentials at the Center for Asian Culinary Studies in Manila and the Culinary Institute of America in New York.
Chef Suzette also served as a freelance writer for publications such as Mega Magazine, Food Magazine, and Get Asia Philippines, contributing articles on food, restaurants, recipes, and cooking techniques.
CHRISTINE PASCUAL
Ms Christine Pascual teaches Principles in International Tourism and
Hospitality. She proceeded to establish a career for herself in the hotel industry after earning her Bachelor's degree in Tourism from the University of Santo Tomas, joining the Hotel Philippine Plaza (then known as the Westin Philippine Plaza) as Service Express Agent in 1998 and moving up to Assistant Front Office Manager over a span of eight years. She then assumed the same position at the Intercontinental Manila, where she helped handle various related operations such as guest relations, concierge, reception, bell service, valet, and business center.
MIRELLE ROMUALDEZ
Mirelle Romualdez teaches the Front of the House component of Room Operations. After finishing her Bachelor of Science in Hotel and Restaurant Administration at the University of the Philippines-Diliman in 1995, she spent the next four years in the USA, going through a variety of frontline posts at the Four Seasons Olympic Hotel in Seattle, Washington. In 1999, she came back to the Philippines to become Service Manager of the Makati Shangri La’s Horizon Club, the hotel’s executive floor. After two years, she moved to Ambergris Solutions to become its Operations Manager, where she set up the call center’s operations and performance management systems. She is currently the company’s Associate Director for Project Development. Director for Corporate Planning.
PAZ CHANYUNGCO
Paz Chanyungco brings her substantive professional experience into the classroom when teaching Marketing. Since 1989, she has held mid-level and executive positions in marketing for top performing local companies such as San Miguel Corporation (SMC), Magnolia Purefoods-Hormel (subsidiaries of SMC), Jollibee Foods Corporation, and Greenwich Pizza (a subsidiary of Jollibee Foods). She has also managed key accounts for advertising agencies in the Philippines and Thailand. A proven marketing strategist, ‘Achie’ lists market analysis and planning, product development and monitoring, and advertising and promotions among her fields of expertise.
