DEAN LORRAINE VILLANUEVA PhD Dr. Lorraine Villanueva is the College’s Dean. Prior to joining Enderun, she was a faculty member of the Department of Hotel, Restaurant, and Institution Management (HRIM) of the College of Home Economics (CHE) at the University of the Philippines Diliman (UPD), where she taught in both graduate and undergraduate programs, handled curriculum development and review, and served on various college and university committees. She has done research and conducted training programs on productivity, quality enhancement, systems analysis, cost control, and teambuilding. She has also done consulting work on total quality management and has had formal training in ISO 9000 from SGS-Yarsley.
Dr. Villanueva earned her BS in Hotel and Restaurant Administration at UPD’s CHE, and was among the top ten in her graduating MBA batch at the university’s College of Business Administration. Dr. Villanueva completed her PhD in Communication at UPD, with her doctoral dissertation titled “Communicating Food Safety in the Formal Foodservice Sector: Approaches and Action Plan,” which was selected for presentation at the 6th Association of Pacific Rim Universities Doctoral Students Conference at the University of Oregon, Eugene in 2005. Her completed research was selected for presentation at the Annual Conference of the International Council for Hotel, Restaurant and Institutional Education (I-CHRIE) held in Dallas, Texas in 2007.
She served two terms (2005-2008) as President of the Council of Hotel and Restaurant Educators of the Philippines (COHREP), a nationwide association of over 200 individual members and 100 institutional member schools offering Hotel and Restaurant Management and similar programs. The council also has six organized regional chapters. She serves as member of the Commission on Higher Education’s Interagency Committee on Student Internship Abroad Programs (SIAP), the Regional Quality Assurance Team (RQAT) and the Technical Working Group for HRM. She is also affiliate director of the Hotel and Restaurant Association of the Philippines.
In May 2000, Dr. Villanueva was awarded the title ‘Certified Hospitality Educator’ by the Educational Institute of the American Hotel and Lodging Association, ‘in recognition of successfully demonstrating the knowledge and skills required for supporting and delivering the highest quality of hospitality education worldwide.’ In June 2006, she received the Professional Achievement Award in HRIM from the UPD CHE Alumni Association for her ‘valuable contribution to the development of the business and management components of the HRIM program of the College, thus enhancing the competitiveness of graduates.’ The Nutritionist-Dietitians’ Association of the Philippines (NDAP) Foundation conferred on her the Clara Ruth Darby Memorial Lectureship Award ‘for her distinguished career in Hotel, Restaurant and Institution Management and her outstanding leadership in hospitality education, which earned for her numerous awards and citations, and for her demonstrated professional competence of the highest degree in the practice of her profession as President of COHREP.’ This award was given Feb. 20, 2007 during the 52nd Annual Convention of NDAP at the Manila Pavilion Hotel. This was the first time such an award was given to an individual outside of the Nutrition and Dietitian profession.
CHEF SEE CHEONG YAN
Chef See is the Corporate Culinary Head at Enderun Colleges. He graduated from Les Roches in Switzerland with a Diploma in Hotel and Restaurant Management. Chef See also earned his Certificate in Business Administration, with honors, from Washington State University.
In addition to his education credentials, Chef See has over 20 years worth of experience in the field of culinary arts worldwide, having worked at the Kempinski Hotel and Traders Hotel in China and at Bahnhofbuffet SBB Basel in Switzerland, among others. In the Philippines, Chef See has led the kitchen operations of Edsa Shangri-la, Hyatt Regency Manila and Tagaytay Highlands. Truly an international citizen, Chef See speaks English, Bahasa Malaysia, Cantonese, Mandarin, French and Filipino fluently.
Chef See, a Malaysian, is married to a Filipina and has two teen-aged sons. To keep fit and trim, he plays soccer and “futsal” on weekends.
AVERY BALBOA
Ms. Avery Balboa, who teaches Human Resource Training and Development, has had nine years of combined hands-on experience in training. A graduate of AB in Mass Communication from the University of the Philippines, she has conducted numerous training and non-training interventions in organizational development, management, customer service, and communication for business organizations. She is also vice president for public relations of TOPS Toastmasters Club (Makati), and treasurer/finance committee head of the Philippine Society for Training and Development Foundation. She is taking up her Six Sigma Training for Green Belt Certification in Six Sigma Alchemy (India), and her MBA in De La Salle University.
INÉS CABARRUS
Ms. Inés Cabarrus is a member of the Enderun faculty whose expertise is on Beverage Management and Wine Appreciation. She has a degree in Theatre and English from the College of the Holy Cross in Worcester, Massachusetts. In addition to this, Ms. Cabarrus earned an International Diploma in Hospitality Management from the William Blue International Hotel Management School in Sydney, Australia. She previously worked as a trainee sommelier at the Wildfire Restaurant in Sydney and as an assistant operations manager at the Sugi Japanese Restaurant in Manila. Among her other interests are writing, literature, philosophy, music, theater and physical fitness. Ms. Cabarrus is the club moderator of the Enderun Food and Wine Society (EFWS).
BEL S. CASTRO, MA
Ms. Bel Castro lectures on Food & Beverage Service Procedures and Banquet, Functions and Catering Services Procedures. She earned her Psychology degree from the Ateneo de Manila University in 1985, which led her to the fields of advertising, public relations, events management, and line production. After nearly 15 years in the business, she chose to earn a one-year Certificate IV in Restaurant Operations at Le Cordon Bleu in Australia, a course she finished with “High Distinction.” In 2003, Ms. Castro became the first Filipino and the first Asian to be awarded an MA in Gastronomy, a double-badged program of Le Cordon Bleu and the University of Adelaide in South Australia, also finishing with “High Distinction.”
Her personal interests are centered on food history, cuisine, and culture. Her research in these fields has led to invitations to present her work at the Symposium of Australian Gastronomy and the prestigious Oxford Symposium of Food and Cookery.
When she’s not teaching, Ms. Castro also serves as the marketing communications consultant and event coordinator for several key clients. Having previously maintained a column in the Lifestyle Section of the Manila Bulletin, Ms. Castro now writes independently, contributing to Appetite magazine, among others.
CHEF MARC CHALOPIN
Alain Ducasse handpicked French Chef Marc Chalopin as the ADF+Enderun Executive Chef, to preserve the standards of Ducasse and ensure that the philosophy, culinary principles and techniques are properly transmitted to students. Before joining Enderun, he has had 20 years of kitchen and teaching experience, working with Alain Ducasse as his sous chef at the one-star Michelin restaurant Jules Verne in Paris. He was opening executive chef of Le Cordon Bleu in Seoul, South Korea, and a teaching chef at Le Cordon Bleu, Paris. Chef Chalopin controls the quality of instructors and curriculum, and teaches advanced culinary classes.
CHEF VANESSA CONANAN
Chef Vanessa Conanan is an assistant instructor for culinary arts. She has an AB in International Studies from De La Salle University, and earned an Associate Degree in Applied Sciences from Le Cordon Bleu Culinary Arts of the Cooking and Hospitality Institute of Chicago, USA. Before joining Enderun, she worked at a Cafe Le Coq, French Bistro, in Chicago. She is a certified Servsafe Food Safety instructor/proctor.
Chef Vanessa is also a part-time coach for Futbol Fanatics, a soccer camp for kids.
ALEX JUREERATANA
Mr. Jureeratana, executive director of food and beverage, is also Enderun’s senior hospitality management faculty member, in charge of the overall food and beverage operations management of ADF+Enderun’s application restaurant, Restaurant 101, and development of Enderun Extension programs. Prior to Enderun, he has held the F&B Director post at Hotel Bel-Air in Los Angeles, The Resort at Pelican Hill in Newport Beach, California, and at MGM Grand/The Mansion Hotel in Las Vegas, where he opened Joel Robuchon and L’Atelier de Joel Robuchon with the world-renowned French chef to acquire a Mobil five-star, AAA five-diamond, and three-Michelin-star within the first year of operation. Throughout Mr. Jureeratana’s professional career, including international assignments, he has only been associated with top-rated hotels. He finished his BA in Accounting/Finance from the University of North Texas, and is fluent in both English and Thai.
CHAD DAVIS
Australian Chad Davis, who is the F&B Manager of Restaurant 101, Enderun’s training restaurant, teaches Food & Beverage Service Procedures. His 17 years of experience include posts as general manager of Lakes Resort Hotel and Paradise Hotel, and proprietor and manager of Chad’s Indigo Bistro Bar, all in Australia. In the Philippines, he has worked as F&B director of Hotel InterContinental Manila and Edsa Shangri-La, and was the F&B manager at Makati Shangri-La. Mr. Davis was also a lecturer on bar and dining courses at the Torrens Valley Institute in his hometown Adelaide.
CIELO DE LUNA
Ms. Cielo de Luna is the instructor for Housekeeping Procedures. A BS in Economics graduate, Ms. De Luna has been working for the Westin Philippine Plaza, now Sofitel Philippine Plaza, for over 30 years. She started her career as guest relations officer and shifted to posts such as corporate sales manager, banquet sales manager, duty manager and executive housekeeper. She is now the rebranding manager/resort and recreations manager, handling branding efforts of the hotel as well as operations of its spa, gym and other recreational facilities.
CHEF CYRIL ERMITA
Chef Cyril is one of Enderun’s Culinary Arts faculty members with expertise in Bakery and Pastry. He graduated from the University of Santo Tomas with a BS in Hotel and Restaurant Management. Prior to joining Enderun, Chef Cyril has been working at the pastry kitchen of Edsa Shangri-la since 1995.
Aside from concocting pastry and bakery recipes, among Chef Cyril’s other interests are reading and critiquing films. Chef Cyril Ermita is the club moderator of Culinaire.
ANA MARIA TUASON-GALANG
Ms. Tuason-Galang, as Enderun’s Career Development Manager, is in charge of arranging students’ practical internships and liaising with the school’s international network of industry partners. Previously, she was senior account manager for VIP Partnerships and Non-Traditional Direct Accounts Team of Globe Telecom. She was also service manager of sales and marketing for Makati Shangri-La, where she was able to cultivate approximately 200 corporate accounts to drive the hotel’s customer base.
CHEF MARKUS GFELLER
Swiss national Chef Markus Gfeller handles the Culinary Arts subject for Enderun. He has extensive experience working the menus of hotels and restaurants in Switzerland, Hawaii, and Manila, in various posts such as commis tournant, chef tournant, chef de cuisine, and sous chef. After going through the three-year apprentice program at the Culinary School in Burgdorf, Switzerland, he further enhanced his skills by taking courses in Basic Fine Dining Service and Oenology in Zürich, and obtaining a management diploma at the National Hotel and Restaurant Management School in Bern. At present, he is chair and chief operating officer of Caspian Concepts, a hotel and restaurant concept development firm, and Beluga Meal Solutions, a passenger service concessionaire for WG&A SuperFerry. He also co-owns CAV, an innovative wine bar located at Fort Bonifacio High Street.
CHEF ANDREAS GILLAR
A native of Austria, executive pastry chef Andreas Gillar acquired his education in the School for Pastry and Bakery in Baden, after which he graduated as Master Confectioner at the Master School for Pastry in Vienna. He has been working for close to 20 years, as pastry chef consultant at Hotel Caravelle in Saigon, as executive pastry chef for Café Wien in Jakarta. He was corporate pastry chef as well of Hashoo Group, which owns and operates two Marriott Hotels and seven Pearl Continental Hotels in Karachi, Pakistan. Lured by the many good things he heard from other chefs about the Philippines, his most recent post was as executive pastry chef of The Peninsula Manila.
NOEL MENDEGORIN
Mr. Noel Mendegorin teaches Food & Beverage Management and Cost Control at Enderun. He earned his BS in Hotel and Restaurant Administration from the University of the Philippines Diliman. He was cost and inventory management controller at Edsa Shangri-La, prior to working as assistant area purchasing manager, handling the requirements of both Edsa and Makati Shangri-La. He is presently The Peninsula Manila’s materials and cost controller, who monitors F&B costs to achieve the hotel’s profitability targets. Mr. Mendegorin is a ServSafe Certified Food Handler and a certified ISO 14001 Environmental Management Systems Auditor. He is a member of the Hotel and Restaurant Cost Controllers Association of the Philippines (HRCCAP), where he served as president for two years.
CHEF SUSANA CECILIA LEGARDA MONTINOLA
Chef Suzette co-teaches the College’s core courses in Culinary Arts. A Communication Arts major from the Ateneo de Manila University, Chef Suzette then earned her Diploma in Hotel and Restaurant Management from Switzerland’s Ecole Les Roches in 1993. She channeled her energies into the hospitality industry, handling food and beverage departments of prominent Manila hotels such as the Mandarin Oriental and the Hotel InterContinental. Since 1999, she has set up and managed her own restaurant in Old Manila, La Cocina de Tita Moning. From 2004 to 2005, she earned her culinary credentials at the Center for Asian Culinary Studies in Manila and the Culinary Institute of America in New York.
Chef Suzette also served as a freelance writer for publications such as Mega magazine, Food magazine, and Get Asia Philippines, contributing articles on food, restaurants, recipes, and cooking techniques.
JOSE MARLON PABITON, JD
Atty. Pabiton, a Juris Doctor who graduated from the Ateneo de Manila Law School, teaches Business Law at Enderun. In 1999, he earned his double degree in AB in Economics and BS in Legal Management from De La Salle University. He worked as director for the Office of Student Behavior in De La Salle-College of Saint Benilde, and was also its legal consultant for some of its projects. He was also instructor of Legal Research and Thesis Writing Methodologies of DLSU-FEU Dual Degree Program in Master’s in Business Administration and Juris Doctor. Atty. Pabiton sits as a panel member of the Ateneo Law School’s Thesis Committee, serves as supervising attorney for students undergoing the law school’s Clinical Legal Education Program, and is a private law practitioner specializing in litigation and corporate planning.
CHRISTINE PASCUAL
Ms. Christine Pascual teaches Principles in International Tourism and Hospitality, and Front Office Procedures. She proceeded to establish a career for herself in the hotel industry after earning her BS in Tourism from the University of Santo Tomas, joining the Hotel Philippine Plaza (then known as the Westin Philippine Plaza) as service express agent in 1998 and moving up to assistant front office manager in a span of eight years. She then assumed the same position at the InterContinental Manila, where she helped handle various related operations such as guest relations, concierge, reception, bell service, valet, and business center.
MIRELLE ROMUALDEZ
Ms. Mirelle Romualdez teaches the Front of the House component of Room Operations. After finishing her BS in Hotel and Restaurant Administration at the University of the Philippines Diliman in 1995, she spent the next four years in the USA, going through a variety of frontline posts at the Four Seasons Olympic Hotel in Seattle, Washington. In 1999, she came back to the Philippines to become service manager of the Makati Shangri-La’s executive floor, Horizon Club. After two years, she moved to Ambergris Solutions to become its operations manager, where she set up the call center’s operations and performance management systems.
MYLENE VILLANUEVA, MBA
Ms. Mylene Villanueva is the faculty member teaching Tourism Planning & Development and Travel & Tour Operations courses at Enderun. Her extensive experience in the tourism and hotel industry, as well as in education, spans over 25 years. Ms. Villanueva has had posts as sales director, reservation and ticketing manager at the Mayon International Hotel and the Grand Holidays Travel & Tour agency, respectively.
Ms. Villanueva completed her MBA from the Far Eastern University and her AB in Mass Communication from St. Paul College Quezon City. She was the program coordinator of tourism management for Far Eastern University, and is also an instructor at the Asia Pacific Training Institute, where she lectures on tour operations and setting up of a travel agency business.
CHEF THOMAS WENGER
Chef Thomas Wenger is senior culinary academic consultant at Enderun. His industry experience spans over 25 years, including posts as executive sous chef at The Oriental Singapore and Makati Shangri-La, and executive chef posts at Royal Hong Kong Jockey Club, Le Royal Meridien Bangkok, Le Meridien President Bangkok, and prior to Enderun, at Mandarin Oriental Manila. This Swiss chef was also trained at Ecole Hoteliere de Lausanne in Switzerland and The Royal Institute of Public Health in London.
LEAH CASTILLO
Ms. Leah Castillo teaches Principles of International Tourism & Hospitality at Enderun. She has worked for close to ten years at Hotel InterContinental Manila, where she is room reservations supervisor and group coordinator of the reservations department. She finished her BS in Hotel and Restaurant Administration from the University of the Philippines Diliman.
MANUEL CARMELO ALBERTO
Mr. Alberto is Enderun’s faculty member teaching Rooms Division Management and Control System. At Edsa Shangri-La Manila, he was the reservations manager, part of the sales and marketing division who oversees the various channels of bookings and guests-servicing. Prior to this, he was reservations/revenue manager at Traders Hotel, Manila. He finished his BS in Commerce, major in Business Administration, from Colegio de San Juan de Letran, Manila, and has earned his Certificate in Hotel Operations from the Business Management Program of the University of California, Los Angeles.
CYNTHIA BERNABE
Ms. Cynthia Bernabe, who teaches Events Management at Enderun, finished her BS in Economics from the Assumption College, and has undergone numerous international trainings and continuing education in events management, including the Event Leadership Executive Certificate Program from the School of Tourism and Hospitality Management of Temple University, Philadelphia, and the Certified Special Events Professional Preparatory Course at the International Special Events Society Eventworld in Hollywood. Ms. Bernabe is also a member of two other colleges as the program director and facilitator of the pioneer post-bachelor diploma program on Professional Event Management and as faculty for Events Marketing and Management in a post-graduate program for Integrated Marketing Communications. As an entrepreneur, she is the founder and manager of WishWorks Event Management.
HECTOR GUBALLA
Mr. Hector Guballa handles classes on Strategic Management. Mr. Guballa was with San Miguel Corporation for eight years, first as business manager for water and juices at La Tondeña Distillers, then as vice president and general manager of PhilBev Partners. His last post was as vice president and general manager of Cosmos Bottling Corporation. He was a past president of the Beverage Industry Association of the Philippines (BIAP), and in 2007, was also director for development at the Ateneo de Manila University, where he is currently a part-time lecture of its John Gokongwei School of Management. Mr. Guballa finished his AB in Economics from the Ateneo de Manila University.
MARIA NERISSA DEL FIERRO-JUAN, ME
Travel and Tour Operations instructor Ms. Juan finished her BS in Tourism from La Consolacion College Manila, from where she received the Most Outstanding Leader Award. She went on to chair the tourism department of the college, and work as operations manager of its laboratory Tours and Travel agency, which trains students in all aspects of travel operations and tour packaging. She has also been instructor and tourism department head both at Southville International School and Colleges and Colegio San Agustin Biñan. Ms. Juan earned her Master’s in Education, major in Educational Management, cum laude, at the University of Santo Tomas.
SERGIO ROSTOLL ROIG
Mr. Sergio Roig teaches Beverage Management at Enderun. As shareholder and general manager of Barcino Corporation, a restaurant and wine importer and retailer, he develops business concepts, including menus and wine suppliers. A native of Barcelona, Spain, he was headwaiter at Guante Blanco, in charge of fifteen different hotels in the city. Señor Roig finished his BS in Tourism and Hotel Management at the Escola Universitària de Turisme i Direcció Hotelera, the Autonomous University of Barcelona. A lover of food and wine, he is a member of the L’Ordre Mondial des Gourmets Dégustateurs and the Châine des Rôtisseurs.
EDWIN SARMIENTO
Mr. Edwin Sarmiento teaches Housekeeping Procedures at Enderun. At the same time, he is service leader and trainor of the housekeeping department of Edsa Shangri-La, where he has been working since 1992. Mr. Sarmiento is also an instructor of Housekeeping Fundamentals at Magsaysay Institute of Hospitality and Culinary Arts (MIHCA). | |
