Food & Beverage Management and Cost Control
Mr. Mendegorin earned his bachelor’s degree in Hotel and Restaurant Administration from the University of the Philippines, Diliman. He was cost and inventory management controller at Edsa Shangri-La, prior to working as assistant area purchasing manager, handling the requirements of both Edsa and Makati Shangri-La. He is presently The Peninsula Manila’s materials and cost controller, who monitors F&B costs to achieve the hotel’s profitability targets. Professor Mendegorin is a ServSafe Certified Food Handler and a certified ISO 14001 Environmental Management Systems Auditor. He is a member of the Hotel and Restaurant Cost Controllers Association of the Philippines (HRCCAP), where he served as president for two years.
